Taco Baked Potatoes

Ingredients

  • Russet potatoes
  • Ground beef taco meat
  • Salsa
  • sour cream
  • Cotija cheese
  • avocado
  • green onions

Directions

  1. Preheat the oven to 400. Scrub the spuds. Pierce them several times with a fork. Bake until tender, 50-75 minutes. Cut an “X” in each potato. Fluff the pulp with a fork.

  2. Pile on taco meat, salsa and sour cream. Sprinkle with cheese, then add avocado and green onions.
