- Ground beef taco meat
- Salsa
- sour cream
- Cotija cheese
- avocado

Preheat the oven to 400. Scrub the spuds. Pierce them several times with a fork. Bake until tender, 50-75 minutes. Cut an “X” in each potato. Fluff the pulp with a fork.

Pile on taco meat, salsa and sour cream. Sprinkle with cheese, then add avocado and green onions.
