Ingredients
- 1 lb. chicken breasts, cut into 1-inch cubes
- 1/4 tsp garlic powder
- 1/4 tsp pepper
- 2 tsp olive oil
- 12 oz. jar marinated quartered artichoke hearts, drained and chopped
- 12 oz. jar roasted sweet red pepper, drained and chopped
- 1/3 cup oil-packed sun-dried tomatoes, chopped
- 1/3 cup Greek olives, sliced
- 1 pkg. ready-to-serve brown rice
- 1 tbsp. minced fresh parsley
Directions

Sprinkle cubed chicken with garlic powder and pepper. In a skillet, heat olive oil over medium heat. Add the chicken; cook and stir until no longer pink, 8-10 minutes. Stir in artichokes, roasted sweet red peppers, sun-dried tomatoes and olives. Cook and stir until heated through, 3-5 minutes.

Meanwhile, prepared rice as directed. Serve rice with the chicken. Sprinkle with parsley.
