Ingredients
- 1/2 cup unsalted butter
- 4 cups frozen corn kernels, thawed
- 1/2 cup chopped green onion
- 1 tsp kosher salt
- 1 tsp black pepper
- 1/4 tsp ground nutmeg
- 2 cups heavy whipping cream
- 4 large eggs
- 8.5 oz. pkg. corn muffin mix

Preheat oven to 375. Spray a 9-inch square baking dish with cooking spray.

In a large skillet, melt butter over medium heat. Add corn and green onion; cook until lightly browned. Remove from heat, and stir in salt, pepper, and nutmeg.

In a large bowl, whisk together cream and eggs; whisk in corn muffin mix. Stir in corn mixture until combined. Spread into prepared pan.

Bake until a wooden pick inserted in center comes out clean, 35-40 minutes.
