Corn Pudding

Ingredients

  • 1/2 cup unsalted butter
  • 4 cups frozen corn kernels, thawed
  • 1/2 cup chopped green onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/4 tsp ground nutmeg
  • 2 cups heavy whipping cream
  • 4 large eggs
  • 8.5 oz. pkg. corn muffin mix

Directions

  1. Preheat oven to 375. Spray a 9-inch square baking dish with cooking spray.

  2. In a large skillet, melt butter over medium heat. Add corn and green onion; cook until lightly browned. Remove from heat, and stir in salt, pepper, and nutmeg.

  3. In a large bowl, whisk together cream and eggs; whisk in corn muffin mix. Stir in corn mixture until combined. Spread into prepared pan.

  4. Bake until a wooden pick inserted in center comes out clean, 35-40 minutes.
