French Onion Shepherd’s Pie

Ingredients

  • 1 1/4 lbs. ground chuck
  • 1 1/2 cups diced yellow onion
  • 10.5 oz. can French onion soup
  • 8 oz. package sliced fresh baby Portobello mushrooms
  • 1 tbsp. chopped fresh parsley
  • 1 tbsp. Worcestershire
  • 2 (20 oz.) packages refrigerated mashed potatoes
  • 1/2 cup whole milk
  • Garnish: chopped fresh parsley

Directions

  1. eheat oven to 400.

  2. In a 10-inch ovenproof skillet, cook ground chuck and onion over medium heat until beef is browned and crumbly, 6-7 minutes. Drain well.

  3. Stir soup, mushrooms, 1 tbsp. parsley, and Worcestershire into beef mixture; cook over medium heat until liquid begins to thicken, about 10 minutes.

  4. Heat mashed potatoes as directed, stirring 1/4 cup milk into each package. Spread potatoes onto beef mixture.

  5. Bake until potatoes are lightly browned, about 10 minutes. Garnish with parsley.
