Pork Loin with Bourbon-Cola Sauce

Ingredients

  • 3 lb. pork loin roast, trimmed and tied with butcher's twine
  • 2 tbsp. olive oil
  • 1 1/2 tsp kosher salt
  • 1 1/2 tsp black pepper, divided
  • 1 cup ketchup
  • 3/4 cup cola
  • 1/2 cup bourbon
  • 1/4 cup light brown sugar
  • 2 tbsp. Worcestershire
  • 2 tbsp. Dijon
  • 1 tbsp. cornstarch
  • 1/2 tsp garlic powder
  • Garnish: chopped fresh parsley

Directions

  1. Preheat oven to 400. Line a rimmed baking sheet with foil; spray foil with cooking spray.

  2. Brush pork with oil; sprinkle with salt and 1 tsp pepper. Place on prepared pan.

  3. Bake for 30 minutes.

  4. Meanwhile, in a small saucepan, bring ketchup, cola, bourbon, brown sugar, Worcestershire, Dijon, cornstarch, garlic powder and remaining 1/2 tsp pepper to a boil over medium heat. Cook, stirring frequently, until thickened, about 10 minutes.

  5. Remove pork from oven, and brush with 3/4 cup sauce. Reduce oven temp to 350.

  6. Bake until cooked through, 25-30 minutes more. Serve with the remaining sauce. Garish with parsley.
