Ingredients
- 3 lbs. red potatoes, cut into wedges
- 1/4 cup chopped green onion
- 1 tbsp. olive oil
- 1 1/2 tsp kosher salt
- 3/4 tsp ground mustard
- 1/2 tsp black pepper
- 1 cup shredded Colby-Jack cheese blend
- Cooked crumbled bacon, chopped green onion, sour cream, to serve
Directions

Preheat oven to 400. Spray a large rimmed baking sheet with cooking spray.

On prepared pan, toss together potatoes, green onion, oil, salt, mustard, and pepper until coated; spread in an even layer.

Bake until fork-tender and golden brown, about 40 minutes, stirring occasionally. Sprinkle with cheese and bake until cheese is melted, about 3 minutes more. Top with bacon, green onion, and sour cream before serving.
