Loaded Roasted Red Potatoes

Ingredients

  • 3 lbs. red potatoes, cut into wedges
  • 1/4 cup chopped green onion
  • 1 tbsp. olive oil
  • 1 1/2 tsp kosher salt
  • 3/4 tsp ground mustard
  • 1/2 tsp black pepper
  • 1 cup shredded Colby-Jack cheese blend
  • Cooked crumbled bacon, chopped green onion, sour cream, to serve

Directions

  1. Preheat oven to 400. Spray a large rimmed baking sheet with cooking spray.

  2. On prepared pan, toss together potatoes, green onion, oil, salt, mustard, and pepper until coated; spread in an even layer.

  3. Bake until fork-tender and golden brown, about 40 minutes, stirring occasionally. Sprinkle with cheese and bake until cheese is melted, about 3 minutes more. Top with bacon, green onion, and sour cream before serving.
