Sausage and Cheese Tater Tot Cups

Ingredients

  • 1 lb. maple breakfast sausage
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 cups shredded sharp Cheddar
  • 1/4 cup chopped green onion
  • 3 cups frozen Tater Tots

Directions

  1. Preheat oven to 375. Spray 6 jumbo muffin cups with baking spray with flour.

  2. In a large skillet, cook sausage over medium heat, stirring frequently, until browned and crumbly, about 6 minutes. Remove sausage using a slotted spoon, and let drain on paper towels.

  3. In a large bowl, whisk together eggs, milk, salt and pepper. Stir in sausage, cheese and green onion. Divide Tater Tots among prepared muffin cups; top with sausage mixture.

  4. Bake until a wooden pick inserted in center comes out clean, 25-30 minutes. Let cool in pan for 5 minutes before serving.
