Crispy Gnocchi with Mushrooms

Ingredients

  • 10 oz. white mushrooms, chopped
  • Olive oil
  • 1 tsp soy sauce
  • 2 garlic cloves, grated
  • 1/2 tsp lemon zest
  • 1 tbsp. olive oil
  • 12 oz. package refrigerated gnocchi
  • 1/4 cup parsley, chopped
  • Salt and pepper

Directions

  1. Cook mushrooms in olive oil in a large nonstick skillet over medium-high heat until golden, 8 to 10 minutes, stirring halfway through. Stir in soy sauce, garlic, and lemon zest; transfer to a bowl. Add olive oil and gnocchi to the skillet. Cook, stirring, until crisp, 5 minutes. Stir in the mushrooms and parsley. Season with salt and pepper.
