Ingredients
- 2 carrots
- 1/4 small daikon radish
- 1 cup water
- 1 cup distilled white vinegar
- 1 tbsp. light brown sugar
- 1 tbsp. kosher salt
Directions

Peel carrots and radish and cut into thin matchsticks. Place in a medium heatproof bowl. Bring water, vinegar, brown sugar and salt to a boil in a saucepan over medium heat, stirring, until the sugar dissolves. Pour over the vegetables. Let cool slightly, stirring occasionally. Cover and refrigerate at least 2 hours or overnight.
