Fried Olives

Ingredients

  • 3-oz. link hot Italian sausage (casing removed)
  • 2 tbsp. grated Parmesan
  • 1 tbsp. chopped parsley
  • 20 large pitted green olives
  • 3/4 cup breadcrumbs
  • 1/4 cup Parmesan
  • 1 cup flour
  • 2 eggs, beaten
  • Vegetable oil, for frying

Directions

  1. Mix Italian sausage with grated Parmesan and chopped parsley.

  2. Cut open olives (do not fully cut in half). Stuff with the sausage mixture and press closed (it’s OK if the olives don’t close completely).

  3. Mix breadcrumbs with Parmesan. Dredge the olives in flour, dip in eggs, then dredge in the breadcrumb mixture.

  4. Working in batches, deep-fry the olives in 350 degree vegetable oil until golden, 4 minutes; drain on paper towels.
