Ingredients
- 1/3 cup olive oil
- 3 dried chiles de arbol
- 1 1/4 lbs. large shrimp (peeled and deveined)
- Salt
- 6 garlic cloves, minced
- 2 tbsp. dry sherry
- 1 tbsp. lemon juice
- Salt
- Chopped parsley
- Lemon wedges, for serving
Directions

Heat olive oil in a large skillet over medium-high heat. Add chiles and shrimp; season with salt. Cook until the shrimp are pink, about 2 minutes per side. Add garlic; cook 30 seconds.

Carefully add dry sherry and lemon juice and cook 30 seconds; season with salt.

Top with chopped parsley. Serve with lemon wedges.
