Ingredients
- 3 russet potatoes (cut into 1-inch chunks)
- Salt
- Vegetable oil, for frying
- Salt
- Smoked paprika
- Saffron Aioli (see recipe)
Directions

Put potatoes in a large pot; cover with water by 1 inch and season with salt. Bring to a boil, then simmer until tender, 12-15 minutes.

Drain on a kitchen towel-lined baking sheet; let cool.

Working in 2 batches, fry the potatoes in 365 degree vegetable oil until crisp, 3-4 minutes. Drain on paper towels.

Sprinkle with salt and smoked paprika and drizzle with saffron aioli.
