Ingredients
- Pinch of saffron
- 3 tbsp. hot water
- 2 pasteurized egg yolks
- 2 garlic cloves, minced
- 2 tbsp. lemon juice
- 1/2 tsp Dijon
- Pinch of salt
- 1/2 cup vegetable oil
- 1/2 cup olive oil
- Salt
Directions

Soak a large pinch of saffron in hot water, 10 minutes. Puree in a blender with egg yolks, garlic, lemon juice, Dijon and a pinch of salt.

With the blender of high speed, slowly add vegetable and olive oils and blend until thicken and smooth, adding a few drops of water if needed; season with salt. Drizzle over the potatoes.
