Soy-Sesame Quick Pickles

Ingredients

  • 2 tbsp. rice vinegar
  • 2 tbsp. soy sauce
  • 1 tbsp. honey
  • 1 tsp toasted sesame oil
  • 4 Persian cucumbers (quartered lengthwise)
  • Pinch of red pepper flakes
  • Salt

Directions

  1. Mix vinegar, soy sauce, honey and sesame oil in a shallow dish. Add cucumbers and a pinch of red pepper flakes. Toss well and refrigerate 30 minutes. Drain and sprinkle with salt.
