Oat-Coconut Power Balls

Ingredients

  • 2 cups rolled oats
  • 2 cups unsweetened flaked coconut
  • 1 cup almond butter
  • 1/2 cup bittersweet chocolate chips
  • 1/4 cup honey
  • 1 tbsp. chia seeds
  • 1 tbsp. flaxseeds
  • 3/4 tsp vanilla
  • 1/2 tsp kosher salt

Directions

  1. Spread roll oats on a baking sheet; bake at 350 until lightly toasted, about 15 minutes. Transfer to a food processor and pulse with flaked coconut until coarsely ground. Add almond butter, chocolate chips, honey, chia seeds, flaxseeds, vanilla and kosher salt. Pulse until the mixture comes together. Roll tbsp.-fuls into balls. Chill until firm, at least 2 hours.
