Ingredients
- 3 bunches broccoli rabe
- 1 tsp baking soda
- Salt to taste
- 1 box orecchiette
- 1 lb. Italian sausage
- 4 tbsp. olive oil, divided
- 2 garlic cloves, sliced
- Red pepper flakes, to taste
- 1/2 cup Romano cheese, grated
Directions

Bring water to a boil.

Cut thick stems off broccoli rabe and discard. Add the broccoli rabe tops, baking soda, and a bit of salt to one pot and cook for 10 minutes. Drain; when cooled down, chop roughly.

In the second pot, cook pasta 2 minutes less than directed. Drain, reserving some of the cooking water.

Meanwhile, in a skillet, saute crumbled sausage with 2 tbsp. of olive oil until brown, then add garlic and red pepper. Cook 1 minute.

Stir in cooked broccoli rabe.

Add pasta to the skillet along with some cooking water and toss until the sauce is coating the pasta and the pasta is perfectly cooked.

Stir in cheese and remaining 2 tbsp. olive oil before serving.
