Ingredients
- 1/2 cup olive oil
- 2 cups diced onions (about 2 medium)
- 2 tbsp. finely minced garlic (about 4 cloves)
- 3 1/2 lbs. juicy, ripe Roma tomatoes, diced
- 2 tbsp. chopped fresh oregano
- 2 tbsp. chopped fresh thyme
- 1 tbsp. chopped fresh rosemary
- 1 tsp kosher salt
- 1/2 tsp black pepper

In a 4-quart saucepan, heat the oil over medium heat. Add the onions and cook, stirring, until translucent and beginning to turn golden, about 13 minutes. Add the garlic and cook until fragrant, 1 minute longer. Add the tomatoes, oregano, thyme, rosemary, salt and pepper. Bring to a boil, then reduce to a simmer and cook until the sauce thickens slightly, 25 to 30 minutes.
