Eggplant Souffle (Spongato)

Ingredients
- 2 medium eggplants
- 4 eggs
- olive oil
- feta cheese
- herbs
Directions

Cut eggplant in half the long way

Brush eggplant with olive oil (several table spoons – it will absorb it all)

Microwave eggplant until done (10-20 minutes). Do not under cook

Wait for it to cool

Scoop out the inside

Mix with eggs and feta cheese and herbs

Pour into ramekins and bake until eggs are done (20-30 minutes)
