Ingredients
- 4 large russet potatoes
- 2 tbsp. olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp. shredded Cheddar
- Sour cream
- Chopped chives
- Crumbled cooked bacon

Prick potatoes several times with a fork. Place on a microwave-safe plate and microwave on HIGH for 5 minutes. Carefully flip the potatoes and continue microwaving until soft, 8-10 minutes more. Meanwhile, preheat broiler to HIGH. Line a large rimmed baking sheet with foil. Cut the potatoes in half lengthwise and, leaving a 1/4-inch border, scoop out the insides. Brush both sides of the potato skins with olive oil and sprinkle with salt and pepper. Place on the prepared pan. Broil, turning occasionally, until starting to crisp, 8-10 minutes. Place the potatoes skin-side down and top each with cheese. Broil until the cheese is melted, 1 to 2 minutes more. Serve topped with sour cream, chopped chives and bacon.
