Ingredients
- 4 cups baby arugula
- 8 oz. ball burrata cheese
- 2 lbs. ripe tomatoes, cut in a variety of shapes (wedges, slices, chunks, etc.)
- 3 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- 2 tsp kosher salt
- 1/2 tsp black pepper
- 6 Prosciutto Crisps (see recipe)
Directions

Scatter the arugula on a serving platter and place the burrata ball in the center. Arrange the tomatoes around the burrata. Break open the burrata ball a little so you can see the creamy center, then drizzle all around the platter with the olive oil. Drizzle the tomatoes and arugula with balsamic vinegar. Season the entire salad with the salt and pepper and top with the prosciutto crisps.
