Asparagus Tempura Fries

Ingredients

  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 1/2 tsp kosher salt
  • 3/4 cup cold seltzer
  • 1 bunch asparagus, trimmed and peeled
  • Vegetable oil, for frying
  • Ponzu sauce, for dipping

Directions

  1. Whisk flour and cornstarch with kosher salt and seltzer. Dip asparagus in the batter, then deep-fry in batches in 350 degree vegetable oil until crisp, 3 to 4 minutes. Drain on paper towels. Serve with ponzu sauce for dipping.
