Ingredients
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp fresh thyme
- 2 tbsp. butter
- 2 lbs. asparagus, trimmed and chopped
- 1 1/2 cups water
- 1 1/2 cups chicken broth
- Big pinch of salt
- 1/2 cup crème fraiche
- Salt and pepper
- Chopped chives
Directions

Saute onion, garlic, and thyme in butter in a large pot over medium-high heat until softened, about 5 minutes. Add asparagus, water and chicken broth and salt. Simmer until tender, 5 to 8 minutes. Puree with an immersion blender. Whisk in crème fraiche and warm through (do not boil). Season with salt and pepper. Top with more crème fraiche and chopped chives.
