Ingredients
- 1 bunch asparagus, trimmed and peeled
- Prosciutto slices
- 1/2 cup mayo
- 1/4 cup roasted red peppers
- 1/2 tsp sherry vinegar
- 1/4 tsp hot smoked paprika
Directions

Cook asparagus in salted boiling water until crisp-tender, 2 minutes. Drain and let cook, then pat dry. Wrap each spear with a slice of prosciutto.

For the dip: Puree mayo with roasted red peppers, sherry vinegar and hot smoked paprika.
