Ingredients
- 1 1/2 cups cake flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup packed dark brown sugar
- 1/2 cup creamy peanut butter, at room temp
- 3 tbsp. applesauce
- 3 tbsp. vegetable oil
- 1 tsp vanilla extract
- 2 eggs
- 1 cup buttermilk
- Banana Butter Frosting (see recipe)
- Sweetened banana chips, for garnish
Directions

Preheat oven to 350. Line twenty-four 2 1/2-inch muffin cups with paper liners.

Stir together flour, baking powder, baking soda, and salt in a small bowl.

In a large bowl, beat together brown sugar, peanut butter, applesauce, oil and vanilla with an electric mixer until smooth and well combined. Add eggs, 1 at a time, beating after each addition until combined. Beat in flour mixture, alternating with buttermilk, on low speed until just combined.

Fill prepared muffin cups two-thirds full. Bake until a toothpick inserted in centers comes out clean, 14 to 16 minutes. Let cupcakes cool in muffin cup 5 minutes. Using a knife, loosen edges; carefully remove cupcakes and transfer to a wire rack to cool completely. Frost with Banana Butter Frosting, then garnish with banana chips.
