Ingredients
- 4 slices sweet onion
- 1 tsp vegetable oil
- 4 ground beef patties
- 1/4 tsp salt
- 1/8 tsp black pepper
- 4 slices Monterey Jack cheese
- 1/2 cup mayo
- 1 tbsp. brewed espresso
- 1 tsp Sriracha
- 4 Kaiser or sesame seed buns, toasted
- Arugula or iceberg lettuce and tomato slices

Heat a grill pan over medium-high heat or an outdoor grill to medium-high heat. Brush onion slices with oil, then transfer to grill pan; grill, turning once, until golden brown, about 10 minutes. Set aside.

Sprinkle beef patties with salt and pepper. Transfer to pan; grill 7 to 9 minutes per side. Add cheese, cover, and grill until cheese is melted, about 1 minute more.

Whisk together mayo, espresso and Sriracha in a bowl until smooth; spread on buns. Top with patties and onion. Add arugula and tomato and bun tops.
