Gazpacho

I use my food processor on pulse to chop all the vegetables. The recipe makes about 10 cups.

Serves 8 people

Ingredients

  • 4 C tomato juice
  • 1/4 C lemon juice
  • 2 tsp salt
  • 2 med garlic cloves
  • 1/4 C olive oil
  • 2 C fresh chopped tomatoes
  • 2 C chopped green pepper
  • 1 C chopped cucumber
  • 1/4 C fresh chopped parsley
  • 1/2 C chopped onion
  • 2 T chopped chives/scallions

Directions

  1. Blend 1st 5 ingredients on high 20-30 sec. until creamy

  2. Pour into bowl and add remaining ingredients

  3. Mix together gently

  4. Cover and chill
