Gazpacho
(from acrazyraisin’s recipe box)
I use my food processor on pulse to chop all the vegetables. The recipe makes about 10 cups.
Serves 8 peopleCategories: soup
Ingredients
- 4 C tomato juice
- 1/4 C lemon juice
- 2 tsp salt
- 2 med garlic cloves
- 1/4 C olive oil
- 2 C fresh chopped tomatoes
- 2 C chopped green pepper
- 1 C chopped cucumber
- 1/4 C fresh chopped parsley
- 1/2 C chopped onion
- 2 T chopped chives/scallions
Directions

Blend 1st 5 ingredients on high 20-30 sec. until creamy

Pour into bowl and add remaining ingredients

Mix together gently
