Ingredients
- 4 flat-iron steaks
- Olive oil, for drizzling, plus 1/4 cup
- Salt and pepper
- 2 tbsp ketchup
- 2 tbsp grainy Dijon
- 1 tbsp Worcestershire
- 1 small garlic clove, finely chopped
- Juice of 1 lemon
- 1 large heart of romaine, chopped
- 1 bundle of arugula, chopped

Heat a grill pan to high. When the grill is very hot, drizzle the steaks with olive oil and season with salt and pepper. Cook for 3 to 4 minutes on each side for pink centers. Rest the meat before serving.

Meanwhile, in a salad bowl, combine the ketchup, Dijon, Worcestershire, garlic and lemon juice. Whisk in the 1/4 cup olive oil and season with salt and pepper. Add the greens and toss. Serve the salad on top of the steaks.
