Marinated Tomato and Herb Salad

Ingredients

  • 2 garlic cloves, minced
  • 3 tbsp. sherry vinegar
  • 1 tsp Dijon
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 tbsp. olive oil
  • 4 pints cherry tomatoes, halved
  • 1/2 cup finely diced red onion
  • 1/4 cup thinly sliced fresh basil
  • 3 tbsp. chopped dill
  • Garnish: chopped fresh basil, chopped fresh dill

Directions

  1. In a large bowl, whisk together garlic, vinegar, mustard, salt and pepper; whisk in oil in a slow, steady stream until well combined. Stir in tomatoes, onion, basil and dill. Cover and refrigerate for at least 1 hour before serving. Garnish with basil and dill.
