Molasses Mustard Barbecue Chicken

Serve with Spicy Grilled Corn and Grilled Marinated Vegetable Kabobs

Ingredients

  • 1/2 cup yellow mustard
  • 1/4 cup ketchup
  • 3 tbsp. molasses
  • 2 tbsp. dark brown sugar
  • 1 1/2 tbsp. apple cider vinegar
  • 1 tbsp. tomato paste
  • 1 1/2 tsp Worcestershire
  • 1 tsp seasoned salt
  • 1/2 tsp smoked paprika
  • 4 bone-in chicken breasts
  • Garnish: black pepper, chopped fresh cilantro

Directions

  1. In a medium bowl, whisk together mustard, ketchup, molasses, brown sugar, vinegar, tomato paste, Worcestershire, salt and paprika until smooth; reserve half of sauce in a small bowl.

  2. Spray grill rack with cooking spray. Preheat grill to medium-high heat.

  3. Pat chicken dry with a paper towel. Lightly spray chicken with cooking spray. Grill chicken, turning occasionally and brushing with remaining barbecue sauce, until cooked through, 3 to 5 minutes per side.

  4. Serve chicken with reserved barbecue sauce. Garnish with pepper and cilantro.
