Ingredients
- 8 ears fresh corn in husks
- 1/2 cup mayo
- 1/2 cup sour cream or Mexican crema
- 1 cup finely grated Cotija or crumbled feta
- 2 tbsp. finely chopped cilantro
- 1/2 tsp ground cumin
- 1/2 tsp ground red pepper
- Lime wedges, to serve
Directions

Microwave corn husks on high for 3 minutes.

Spray grill rack with cooking spray. Preheat grill to medium-high heat.

Grill corn in husks for 1 to 2 minutes per side. Let cool enough to handle, about 5 minutes.

Shuck corn. Lightly spray corn with cooking spray. Grill, turning every 2 minutes, until kernels are tender and lightly browned, about 8 minutes.

In a medium bowl, stir together mayo and sour cream. Brush mixture onto corn, and sprinkle with cheese, cilantro, cumin, and red pepper. Serve with lime.
