black bean and corn salsa

Ingredients

  • 1 1/2 cups corn (fresh, cut from the cob, or frozen)
  • 1 cup black beans, canned or cooked, rinsed
  • 1 red bell pepper, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 clove of garlic
  • 1 lime (for juice)
  • 2 tsp cilantro
  • salt, to taste
  • pepper, to taste

Directions

  1. Cook corn in small amount of boiling water, 4 minutes, or until corn is crisp-tender. Mix with other ingredients.
