Pepita & Cilantro Pesto

Ingredients

  • 2 1/2 cups packed cilantro leaves
  • 3/4 cup packed parsley leaves
  • 1/3 cup shredded Manchego cheese
  • 2 tbsp. unsalted roasted pepitas
  • 2 tbsp. lime juice
  • 1/2 tsp finely chopped garlic
  • 1/4 tsp kosher salt
  • 5 tbsp. canola oil

Directions

  1. Combine cilantro, parsley, Manchego, pepitas, lime juice, garlic, and salt in a food processor. Pulse until very finely chopped. With the motor running, slowly stream in canola oil; process until smooth, about 20 seconds. Scrape down sides if necessary and process once more until smooth.
