Ingredients
- 2 1/2 cups packed cilantro leaves
- 3/4 cup packed parsley leaves
- 1/3 cup shredded Manchego cheese
- 2 tbsp. unsalted roasted pepitas
- 2 tbsp. lime juice
- 1/2 tsp finely chopped garlic
- 1/4 tsp kosher salt
- 5 tbsp. canola oil
Directions

Combine cilantro, parsley, Manchego, pepitas, lime juice, garlic, and salt in a food processor. Pulse until very finely chopped. With the motor running, slowly stream in canola oil; process until smooth, about 20 seconds. Scrape down sides if necessary and process once more until smooth.
