Ingredients
- 2 1/4 tsp coriander seeds
- 2 1/4 tsp cumin seeds
- 1 1/2 tsp allspice berries
- 1 1/2 tsp whole black peppercorns
- 6 whole cloves
- 1/2 cup annatto (achiote) seeds
- 4 1/2 tbsp. dried Mexican oregano
Directions

Combine coriander, cumin, allspice berries and black peppercorns and cloves in a small skillet. Toast over medium heat until fragrant, 2 to 3 minutes. Let cool completely. Combine with annatta seeds and Mexican oregano. Grind in batches in a spice grinder until super-fine.
