Antipasto Salad with Grilled Broccolini

Ingredients

  • 12 oz. broccolini
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 15 oz. can white beans, drained and rinsed
  • 1/2 cup sliced salami
  • 1/4 cup chopped hot cherry pepper, plus 1 tbsp brine
  • 1 tbsp white wine vinegar
  • 2 tbsp olive oil
  • Salt and pepper

Directions

  1. Toss broccolini with olive oil and salt. Grill over medium-high heat, turning until crisp-tender, 5 minutes. Transfer to a cutting board and let cool, then chop. Toss beans with the broccolini, salami, hot cherry pepper, brine, vinegar, and olive oil; season with salt and pepper.
