Gazpacho

Ingredients

  • 6 cups tomato juice
  • 2/3 cup pineapple juice
  • 2 mangoes or papayas, firm
  • 2 avocadoes
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 red onion
  • 2 limes (enough for 3 T lime juice)
  • tabasco sauce, 4 dashes, to taste
  • 3 T cilantro, fresh and chopped
  • salt and pepper, to taste
  • corn tortillas, hot and crispy

Directions

  1. Peel, seed, and dice the mangoes and avocadoes to medium size.

  2. Dice the peppers and onion small.

  3. Combine in bowl.

  4. Chill and serve with hot corn tortillas.
