Ingredients
- 6 firm avocados
- Salt and pepper
- Grapeseed oil
- 3 tbsp balsamic vinegar
- 1 tsp Dijon
- 1/4 cup fresh parsley
- 3 garlic cloves (crushed and quartered)
- 1/2 tsp salt
- 1/8 tsp pepper
- 6 tbsp olive oil
- More parsley, for serving
Directions

Quarter avocados; season with salt and pepper and brush with oil. Grill over medium-high heat, turning, until marked all over, about 3 minutes.

Combine vinegar, Dijon, parsley, garlic, salt and pepper in a blender. With the blender running, add olive oil and puree until smooth.

Drizzle the dressing over the avocados and garnish with more parsley.
