Sal Fish Cakes

Ingredients

  • 1 lb cod fish
  • 4 tbsp oil
  • 2 cups chopped onion
  • 2 cups flour
  • 2 tsp baking powder
  • salt to taste
  • 2 eggs lightly beaten
  • 2 tbsp butter melted
  • 24 ounces evap milk
  • hot sauce
  • west indian seasoning

Directions

  1. Boil salt fish, drain and cut up or shred.

  2. saute onions in oil

  3. Combine flour, baking powder and make a hole in the centre. pour 2 lightly beaten eggs, milk and butter into centre and mix. Add chopped onion, west indian seasoning and pepper sauce. then mix in salt fish, stir and taste. Fry in deep oilk about a tsp and turn.do not burn. dry on paper towel. can be frozen.
