Grilled Pizza Rosso

Ingredients

  • 2 tbsp. olive oil
  • 2 garlic cloves, smashed
  • 28 oz. can whole peeled tomatoes (crushed by hand)
  • 1 basil sprig
  • Pinch of sugar
  • Salt and pepper
  • Grilled Pizza (see recipe)
  • Dried oregano
  • Pecorino

Directions

  1. Heat olive oil and garlic in a saucepan over medium-high heat until sizzling. Add tomatoes, basil and sugar; season with salt and pepper. Simmer, stirring, until thickened, 15 to 20 minutes. Discard the basil and garlic. Grill the pizza dough, topping with 1 cup of the sauce after flipping. Sprinkle with dried oregano and pecorino and drizzle with olive oil before serving.
