Ingredients
- 1 1/2 lbs. green tomatoes, sliced 1/4-inch thick, seeded if desired
- 1 tsp kosher salt, divided
- 1/2 cup panko, lightly crushed
- 1/2 cup plain cornmeal
- 1/2 cup quick-mixing flour
- 1/4 tsp smoked paprika
- 1/4 tsp black pepper
- 3 large eggs
- Hot sauce, to serve
Directions

Place tomato slices in a single layer on paper towels; sprinkle 1/2 tsp salt all over tomatoes. Let stand for 30 minutes. Pat dry with paper towels.

In a medium bowl, whisk together crushed panko, cornmeal, flour, paprika, pepper and remaining 1/2 tsp salt. In a shallow dish, beat eggs. Dip tomato slices, one at a time, in egg, letting excess drip off. Dredge in bread crumb mixture, pressing to adhere.

Working in batches, liberally spray tomatoes all over with cooking spray, and place in air fryer basket in a single layer.

Set air fryer temp to 400 and cook until golden brown on both sides, 10 to 12 minutes. Serve immediately with hot sauce.
