Ingredients
- 4 large bell peppers, halved lengthwise and seeded
- 3 tbsp. olive oil, divided
- 1/4 tsp kosher salt
- 1 lb. ground turkey sausage
- 2 cups marinara
- 2 cups orzo, cooked as directed
- 2/3 cup ricotta
- 2 tbsp. chopped fresh basil
- 1 cup finely shredded mozzarella
- Garnish: chopped fresh basil, chopped fresh parsley
Directions

eheat oven to 400.

In a 13×9-inch baking dish, place bell pepper halves cut side up. Drizzle with 1 tbsp. oil, and sprinkle with salt.

Bake for 12 minutes.

Meanwhile, in a large skillet, heat remaining 2 tbsp. oil over medium-high heat. Add sausage; cook until lightly browned, 5 to 6 minutes. Stir in marinara; remove from heat. Fold in orzo, ricotta, and basil. Divide mixture among pepper. Top with mozzarella.

Bake until peppers are tender, about 15 minutes. Let stand for 5 minutes before serving. Garnish with basil.
