Ingredients
- 1 1/2 lbs. thick-cut bacon, chopped
- 4 ripe fresh peaches, peeled and diced
- 1/4 cup light brown sugar
- 1/4 cup apple cider vinegar
- 2 tbsp. Dijon
- 2 tbsp. bourbon
- 1 tsp black pepper

In a large Dutch oven, cook bacon over medium-high heat, stirring frequently, until crisp, about 20 minutes. Remove bacon using a slotted spoon, and let drain on paper towels. Wipe pot clean.

In same pot, bring peaches, brown sugar, vinegar, mustard, bourbon, and pepper to a boil over medium-high heat. Stir in bacon. Reduce heat to medium-low; simmer, stirring occasionally, until peaches break down, 20 to 25 minutes. Let cool to room temp before using.
