Root Beer Baked Beans

Ingredients

  • 1 tbsp. vegetable oil
  • 1 cup diced yellow onion
  • 2 garlic cloves, minced
  • 2 15-oz. cans pinto beans, drained and rinsed
  • 2 15-oz. cans red beans, drained and rinsed
  • 2 15-oz. cans cannellini beans, drained and rinsed
  • 2 12-oz bottles root beer
  • 1/2 cup apple cider vinegar
  • 1/2 cup ketchup
  • 3 tbsp. light brown sugar
  • 2 tbsp. Dijon
  • 2 tsp chili powder
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper

Directions

  1. eheat oven to 400.

  2. In a large Dutch oven, heat oil over medium-high heat. Add onion; cook, stirring frequently, until lightly browned, about 8 minutes. Stir in garlic; cook for 1 minute. Stir in beans and all remaining ingredients; bring to a boil. Transfer pot to oven.

  3. Bake, uncovered, until liquid is thickened, about 45 minutes. Stir before serving.
