Spicy Pickle Husk Puppies

Ingredients

  • Vegetable oil, for frying
  • 1 cup all-purpose flour
  • 1 cup plain yellow cornmeal
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 tsp baking soda
  • 2 large eggs, lightly beaten
  • 1 cup whole buttermilk
  • 1 cup minced spicy pickles
  • White Barbecue Dipping Sauce (see recipe)

Directions

  1. a large Dutch oven, pour oil to a depth of 2 inches and heat over medium-high heat until a deep-fry thermometer registers 375.

  2. In a medium bowl, whisk together flour, cornmeal, salt, pepper and baking soda; make a well in center of mixture. Stir in eggs and buttermilk just until combined; fold in pickles.

  3. Fry batter by tbsp.fuls until golden brown, 1 to 2 minutes per side. Let drain on paper towels. Serve with White Barbecue Dipping Sauce.
