Ingredients
- 2 tbsp. olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 4 chicken breasts
- 1/2 cup chopped smoked sausage
- 1 cup drained Quick-Pickled Cherry Tomatoes (see recipe)
- 2 tbsp. chopped fresh parsley

eheat oven to 400.

In a 10-inch cast-iron skillet, heat oil over medium-high heat.

Sprinkle salt and pepper all over chicken. Cook chicken until lightly browned, about 2 minutes per side. Remove from skillet. Add sausage to skillet; cook, stirring occasionally, until lightly browned, about 2 minutes. Return chicken to skillet. Add Quick-Pickled Cherry Tomatoes.

Bake until tomatoes begin to burst and chicken is cooked through, about 10 minutes. Sprinkle with parsley before serving.
