BLT Chicken Salad-Stuffed Tomatoes

Ingredients

  • 2 cups chopped cooked chicken
  • 8 slices bacon, cooked and crumbled
  • 3/4 cup mayo
  • 1/3 cup finely chopped celery
  • 2 tbsp. finely chopped green onion
  • 1/2 tsp black pepper, divided
  • 2 lbs. small Campari tomatoes (about 30 tomatoes)
  • 1/4 tsp salt
  • Garnish: shredded lettuce, crumbled cooked bacon

Directions

  1. In a medium bowl, stir together chicken, bacon, mayo, celery, green onion, and 1/4 tsp pepper; cover and refrigerate.

  2. Using a serrated knife, cut a thin slice off bottom of tomatoes to create a level base. Cut off top of tomatoes. Using a melon baller or small spoon, remove pulp, leaving shells intact. Place tomatoes, hollow side down, on paper towels, and let stand for 10 minutes. Sprinkle inside of tomato shells with salt and remaining 1/4 tsp pepper.

  3. Spoon chicken salad into each tomato. Garnish with lettuce and bacon. Serve immediately.
