Blueberry Muffin Bread

Ingredients

  • 2 1/2 cups self-rising flour
  • 1 cup granulated sugar
  • 1 cup whole milk, room temp
  • 1/4 cup vegetable oil
  • 1 large egg, room temp
  • 1 cup fresh blueberries
  • Garnish: sparkling sugar

Directions

  1. eheat oven to 350. Spray an 8×5-inch loaf pan with baking spray with flour.

  2. In a large bowl, whisk together flour and granulated sugar. In a medium bowl, whisk together milk, oil and egg. Fold milk mixture into flour mixture just until combined.

  3. Spread half of batter into prepared pan. Top with half of blueberries. Top with remaining batter and remaining blueberries. Sprinkle with sparkling sugar.

  4. Bake until a wooden pick inserted in center comes out clean, about 1 hour. Let cool in pan for 10 minutes. Remove from pan and let cool completely on a wire rack. Store in an airtight container for up to 3 days.
