Calabacita y Elote

This traditional dish is easy to make and extremely satisfying. You can serve it as a side, or add protein (I like shredded chicken or pork carnitas) to make it a main
Prep time: 10 minutes
Cook time: 20 minutes
Serves 4 people
Ingredients
- 1.5 lbs zucchini/squash, sliced.
- 2.5 cups corn kernels (fresh or canned)
- 3 Roma tomatoes, diced
- 1 Poblano pepper, diced
- 2 jalapeños, medium, diced
- 1 clove garlic, minced
- 1/4 cup chopped onion
- Salt& pepper
- Olive oil

(If using fresh corn) boil corn kernels for about 10, until tender. Drain and reserve.

Heat some olive oil in a large skillet. Add onion and garlic. Sauté over medium until tender, about 3 min.

Add calabasas, tomatoes, and peppers. Generously season with salt and pepper (I mean a LOT). Mix, then cover and cook on med-high until calabasas is just softening, about 5 min.

Add corn. Mix well. Cover, remove from heat, and serve.
