Ingredients
- 1/2 cup olive oil
- 2 cloves garlic, chopped
- 1/2 a white onion, chopped
- 1 bell pepper, sliced
- 28oz can of crushed tomatoes
- 5 eggs
- Pinch of ground cumin
- Pinch of cinnamon
- Pinch of paprika
- Pinch of mint
- Pinch of celery powder
- Pinch of red pepper flakes
- Salt and pepper.
Directions

In a large skillet over low, heat oil, garlic, onions and spices until onion begins to soften and garlic turns golden-brown.

Raise heat to med-high. Add tomatoes and bell pepper. Once sauce reaches a soft boil, lower and simmer uncovered for 5-10 min allowing sauce to thicken and peppers to soften. Add more s&p if needed.

Break eggs directly into the sauce, season with more s&p . Cover, and cook for about 2 min.

Spoon a little bit of the sauce over the eggs, cover and continue to cook until eggs set, 5-10 min.
