Red Velvet Cake

buttermilk = 1 cup milk + 1 tbsp vinegar + 10 min
do not sub butter for margarine

Ingredients
- 1-1/2 cup sugar
- 2 eggs
- 2 cups flour
- 1/2 cup shortening
- 1 tbsp cocoa
- 1 tsp vinegar
- 1 oz red food coloring (or 1/2 oz + 1/2 oz water)
- 1 cup buttermilk
- 1 tsp baking soda
- 1 tsp vanilla
- *2 cups sugar
- *1 cup shortening
- *2 sticks margarine softened
- *2 cups milk
- *1/2 cup flour
- *2 tsp vanilla
Directions

In a large bowl, mix sugar, eggs, and shortening

In a small bowl, mix cocoa and food coloring; add to large bowl

Mix in flour, milk, baking soda, vinegar, and vanilla

Bake at 350* for 25-30 min; allow to cook completely

For frosting (*), mix milk and flour; cook over low heat on stove until thick; allow to cool completely

Cream shortening, sugar, and margarine; beat until fluffy

Add cooled flour mixture and vanilla and beat at a high speed

Store cake in refrigerator
