Red Velvet Cake

buttermilk = 1 cup milk + 1 tbsp vinegar + 10 min

do not sub butter for margarine

Ingredients

  • 1-1/2 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1/2 cup shortening
  • 1 tbsp cocoa
  • 1 tsp vinegar
  • 1 oz red food coloring (or 1/2 oz + 1/2 oz water)
  • 1 cup buttermilk
  • 1 tsp baking soda
  • 1 tsp vanilla
  • *2 cups sugar
  • *1 cup shortening
  • *2 sticks margarine softened
  • *2 cups milk
  • *1/2 cup flour
  • *2 tsp vanilla

Directions

  1. In a large bowl, mix sugar, eggs, and shortening

  2. In a small bowl, mix cocoa and food coloring; add to large bowl

  3. Mix in flour, milk, baking soda, vinegar, and vanilla

  4. Bake at 350* for 25-30 min; allow to cook completely

  5. For frosting (*), mix milk and flour; cook over low heat on stove until thick; allow to cool completely

  6. Cream shortening, sugar, and margarine; beat until fluffy

  7. Add cooled flour mixture and vanilla and beat at a high speed

  8. Store cake in refrigerator
