Olive Garden Bruschetta al Pomodoro

Ingredients

  • 8 roma/plum tomatoes, seeded and chopped
  • 1 Italian or French-style bread loaf
  • 5 basil leaves, fresh and chopped
  • A dash of red pepper, crushed
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • A pinch of each dried oregano, black pepper and salt

Directions

  1. Preheat the broiler.

  2. Combine tomatoes with garlic, basil, red pepper, oregano, olive oil, pepper and salt in a large sized mixing bowl. To coat the mixture completely, feel free to use more of the olive oil. Let sit for 10 to 12 minutes at room temp.

  3. Slice the bread and arrange the slices on a large sized baking sheet, in a single layer. Brown the bread slices slightly (both sides) in the oven. Remove from oven and spread the tomato mixture over browned slices. Broil in the preheated broil until the mixture is hot but not cooked through, for a couple minutes.
